What is Wagyu?

“Wagyu” refers to a Japanese breed of cattle famous worldwide for the exceptional quality of its meat. Its secret? Unique marbling — a fine network of intramuscular fat that literally melts during cooking, giving a melt-in-the-mouth texture and an incomparably rich, buttery flavour. Raised under strict conditions and with age-old know-how, Wagyu is now considered one of the finest beef in the world.

A rare meat, available in limited quantities

We work directly with a Wagyu breeder to offer you authentic cuts of impeccable quality. Because the breed is so rare, we only receive Wagyu for one to two weeks roughly every six weeks. We therefore recommend contacting our shop or joining our dedicated customer list to be notified of each arrival.

How to cook Wagyu?

To bring out the full potential of this exceptional meat, simplicity is the best approach:

  • Take the meat out of the fridge about 30 minutes before cooking so it reaches room temperature.
  • Sear it over high heat for a few minutes on each side in a very hot pan, without adding fat — Wagyu's marbling is more than enough.
  • Season simply with fleur de sel and a twist of pepper at the end of cooking.
  • Let it rest for a few minutes before serving so the juices spread through the meat.
